


Trivio, the Michelin-starred and Sol Repsol awarded restaurant, offers a unique and innovative proposal of dry land cuisine. A tasty and unexpected journey through lost and forgotten local ingredients and ancient techniques and flavours from La Mancha county, with a twist on future modern cuisine.
Since the opening of Trivio in 2015, the chef Jesús Segura (awarded for Chef’s Revelation and on Madrid Fusion legendary congress) and his team, have developed new lines of investigation on dry land cuisine. A modern cuisine that unites both tradition and the unexpected on flavours and techniques. In 2018, they won their first Michelin star and in 2019 their first Sol Repsol.
